Ingredients
50g ramson leaves, washed
40g flaked almonds or walnuts
2-3tbsp olive oil
25g parmesan or strong cheddar
Sea salt and black pepper
Preparation
Toast the flaked almonds or walnuts in a dry frying pan on a medium heat until golden. Add all of the ingredients except the salt and pepper to a food processor with a little oil and blitz, pouring more oil in until you reach the desired consistency. Season to taste. Use it as a dip, a sauce, with pasta, with cheese on toast, poached eggs, etc.
