Hazelnut and Orange Zest Biscotti

Ingredients

  • 75g caster sugar
  • 1 egg
  • zest of 1/4 orange
  • 1/4 tsp baking powder
  • 125g pl flour (I used organic spelt)
  • shelled hazelnuts – about 30g

Method

Preheat oven 160 degrees C (fan assisted)

Beat the egg, sugar and orange zest together. Add the flour and baking powder and stir well. Stir in hazelnuts. Shape into a flattened log – if too wet, add more flour. Bake log for 40 minutes, take out and slice into 1cm wide pieces, put back in oven for 10 mins, turn the slices over then 10 more minutes. Eat! Store in a sealed jar to keep crisp.
